This role embraces a modern ‘Hybrid’ work model, acknowledging the blend of traditional culinary demands with flexible administrative tasks. While the core of your work – which includes leading daily kitchen operations, precise food preparation, expert cooking, and ensuring unparalleled food quality and consistency – will naturally be performed on-site in our bustling, state-of-the-art kitchen, we offer the flexibility for certain administrative and creative responsibilities to be managed remotely. This could encompass focused menu planning sessions, strategic supplier communications, in-depth inventory analysis, meticulous recipe testing and documentation, and some team meetings, allowing for a balanced and efficient approach to your demanding and rewarding role. You will be directly responsible for crafting innovative, seasonally-inspired dishes that highlight the very best of the Western Cape’s rich produce and bountiful seafood, managing and mentoring kitchen staff, upholding stringent hygiene and safety standards, and contributing significantly to the overall success and continued acclaim of Isabella’s Restaurant. Key Responsibilities

  • Lead and manage all aspects of daily kitchen operations, including precise food preparation, expert cooking, and immaculate presentation.
  • Develop and continuously innovate seasonal menus, incorporating the freshest local and sustainable ingredients, with a strong focus on seafood specialties.
  • Oversee meticulous inventory management, stringent portion control, and effective waste reduction strategies to optimize food costs without compromising quality.
  • Ensure strict adherence to all food safety, hygiene, and sanitation standards (including HACCP principles) across all kitchen areas.
  • Train, mentor, and supervise all kitchen staff, fostering a positive, respectful, and highly productive work environment focused on continuous improvement.
  • Manage kitchen budgets, staff schedules, and rotations effectively to ensure smooth and efficient operations.
  • Collaborate closely with the restaurant management team on front-of-house coordination, special events planning, and enhancing the overall guest experience.
  • Maintain all kitchen equipment in excellent working order and promptly report any maintenance needs.
  • Actively participate in remote meetings for menu planning, administrative reviews, and creative strategy sessions as required.
  • Contribute significantly to the restaurant’s esteemed brand image through consistent culinary excellence and innovative, memorable offerings.

Required Skills

  • Proven extensive experience as a Chef in a reputable restaurant or similar high-volume culinary establishment.
  • Exceptional culinary skills with a deep understanding of various cooking methods, international cuisines, and specifically, seafood preparation.
  • Demonstrated strong leadership and effective team management abilities, with a track record of motivating and developing staff.
  • Comprehensive knowledge of food safety and hygiene regulations and best practices.
  • Excellent communication, interpersonal, and organizational skills.
  • Ability to work effectively, calmly, and efficiently under pressure in a fast-paced, high-demand kitchen environment.
  • Proficiency in inventory management, precise cost control, and basic kitchen budgeting.
  • Outstanding creativity and an undeniable passion for developing new, exciting, and innovative dishes.

Preferred Qualifications

  • A formal culinary degree or equivalent professional certification from a recognized institution.
  • Demonstrable experience with traditional South African regional cuisine and established local ingredient sourcing networks.
  • Intermediate computer literacy for remote administrative tasks, communication, and recipe management systems.
  • Advanced certification in food safety management (e.g., HACCP).
