Job Description

We are seeking an exceptionally talented and visionary Executive Chef to lead our culinary operations at one of our flagship properties in Harare. This pivotal role demands a culinary artist with a robust understanding of both international and local Zimbabwean cuisine, a proven track record in managing high-volume kitchen environments, and an unwavering commitment to gastronomic excellence. The Executive Chef will be responsible for overseeing all aspects of our food production, from menu conceptualisation and development to ensuring the highest standards of food quality, safety, and presentation across all outlets, including signature restaurants, bustling banqueting facilities, and premium room service. You will inspire, mentor, and lead a diverse team of chefs and kitchen staff, championing innovation while meticulously maintaining cost-efficiency and profitability. Key Responsibilities

  • Lead and manage all culinary operations, ensuring consistent delivery of high-quality food across all outlets.
  • Develop, design, and execute innovative and appealing menus for restaurants, banquets, and special events, balancing guest preferences with operational efficiency.
  • Oversee inventory management, procurement, and control food costs without compromising quality or freshness.
  • Recruit, train, mentor, and motivate a diverse team of kitchen staff, fostering a positive, productive, and high-performance work environment.
  • Ensure strict adherence to all food safety, hygiene, and sanitation standards (including HACCP principles) within all kitchen areas.
  • Manage kitchen budgets, financial forecasts, and operational efficiency to achieve profitability targets.
  • Collaborate closely with Food & Beverage management to align culinary offerings with overall property strategy and evolving guest expectations.
  • Monitor global and local food trends, introducing new techniques, ingredients, and dishes to keep our culinary offerings fresh, exciting, and competitive.
  • Maintain all kitchen equipment, ensuring proper functionality, cleanliness, and safety standards.
  • Effectively handle guest feedback, special requests, and dietary requirements with professionalism and creative problem-solving.

Required Skills

  • Minimum of 8-10 years of progressive culinary experience, with at least 3-5 years in an Executive Chef or Head Chef role within a reputable hotel or large-scale hospitality establishment.
  • Demonstrated expertise in both international and local Zimbabwean culinary traditions and techniques.
  • Strong leadership, team management, and exceptional interpersonal communication skills.
  • Proficiency in inventory management, cost control, and financial planning for complex kitchen operations.
  • Thorough knowledge of food safety regulations and hygiene standards (e.g., HACCP certification).
  • Ability to work effectively under pressure in a fast-paced environment while maintaining composure and meticulous quality standards.
  • Exceptional creativity, a passion for culinary innovation, and a keen eye for presentation.
  • Fluency in English (written and spoken).

Preferred Qualifications

  • Bachelor's degree or higher diploma in Culinary Arts, Hospitality Management, or a related field.
  • Experience working in a multi-outlet hotel environment with diverse culinary offerings.
  • Knowledge of sustainable practices in food sourcing and kitchen operations.
  • Fluency in a local Zimbabwean language such as Shona or Ndebele.
