Key Responsibilities
- Perform precise cutting, trimming, deboning, and portioning of various types of meat (beef, lamb, pork, poultry) according to established standards and customer requests.
- Prepare and process a wide range of meat products into various retail cuts, sausages, marinades, and other specialty items.
- Maintain accurate inventory control, including receiving, inspecting, storing, and rotating meat products to ensure freshness and minimize waste.
- Ensure the butchery department consistently adheres to strict hygiene, sanitation, and food safety standards (HACCP principles, OHS guidelines).
- Safely operate and maintain all butchery equipment, including slicers, grinders, saws, and mincers, ensuring they are clean and in good working order.
- Provide exceptional customer service, offering expert advice on meat selections, cooking methods, portion sizes, and product care.
- Assist with the merchandising and attractive display of meat products to ensure a well-stocked, visually appealing, and inviting counter.
- Monitor product quality, freshness, and expiry dates rigorously, promptly removing any outdated or substandard items.
- Assist in the training and mentorship of junior butchery staff members, fostering a culture of continuous learning.
- Adhere strictly to all company policies, procedures, and ethical guidelines.
Required Skills
- Minimum of 2 years of proven experience as a professional Butcher with exceptional knife skills.
- In-depth knowledge of various meat cuts, meat quality assessment, and preparation techniques.
- Comprehensive understanding and practical application of food safety and hygiene regulations (HACCP).
- Ability to work efficiently and effectively both independently and as an integral part of a team.
- Strong customer service orientation and excellent verbal communication skills.
- Physical stamina to stand for extended periods, lift heavy objects (up to 25kg), and perform repetitive tasks.
- Meticulous attention to detail and an unwavering commitment to product quality and presentation.
Preferred Qualifications
- Formal Butchery qualification, apprenticeship, or relevant vocational training certificate.
- Previous experience working in a retail supermarket butchery environment.
- Knowledge of local meat preferences and traditional South African cuts and preparations.
