Key Responsibilities
- Develop and maintain an outstanding wine list that aligns with Coobs Restaurant's culinary philosophy and guest preferences.
- Provide expert wine recommendations and pairings to guests, enhancing their dining experience with insightful and engaging descriptions.
- Manage all aspects of wine cellar inventory, including ordering, receiving, stocking, and conducting regular stocktakes.
- Ensure proper storage and handling of all wines to maintain optimal quality and longevity.
- Train and educate front-of-house staff on wine knowledge, service standards, and effective upselling techniques.
- Oversee wine service during shifts, ensuring glassware is immaculate and all pouring and presentation standards are consistently met.
- Maintain up-to-date knowledge of global wine trends, new vintages, and emerging wineries.
- Build and foster strong relationships with wine suppliers and distributors.
- Manage wine costs and contribute to achieving beverage revenue targets.
- Handle guest queries and complaints regarding wine in a professional and courteous manner.
Required Skills
- Extensive and demonstrable knowledge of wines, spirits, and non-alcoholic beverages from various regions globally.
- Proven experience as a Sommelier or Head Wine Steward in a reputable fine-dining establishment.
- Exceptional communication and interpersonal skills, with the ability to engage and educate guests and staff.
- Strong sales acumen and a passion for delivering outstanding customer service.
- Excellent organizational and inventory management skills.
- Ability to work effectively under pressure in a fast-paced environment.
- A recognized Sommelier certification (e.g., WSET Level 3 or 4, Court of Master Sommeliers Introductory/Certified Sommelier).
Preferred Qualifications
- Advanced Sommelier certification (Advanced Sommelier, Master Sommelier, WSET Diploma).
- Experience with fine wine cellars and managing high-value inventory.
- Multilingual abilities, especially French or Italian, would be an advantage.
- Previous experience in a restaurant recognized by prestigious culinary guides.
