Job Description

We seek an exceptionally talented and passionate Chef to elevate our culinary offerings at Gabriëlskloof Estate. This pivotal role requires a creative individual to lead kitchen operations, crafting exquisite, seasonal menus highlighting the Western Cape’s best ingredients. The successful candidate will maintain high standards of food quality, presentation, and guest satisfaction for both our restaurant and guesthouse patrons. You will inspire and mentor junior staff, manage kitchen resources efficiently, and ensure compliance with all health and safety regulations. This is an incredible opportunity for a Chef desiring to make a significant impact in a breathtaking setting, contributing to a unique food and wine destination. While primarily on-site for operational excellence, this hybrid role allows for strategic menu development and administrative planning tasks that can be managed with some flexibility, balancing intense kitchen periods with culinary innovation.

Key Responsibilities

  • Develop and execute innovative, seasonal menus for restaurant and guesthouse, focusing on local produce.
  • Oversee all kitchen operations: food preparation, cooking, plating, presentation, ensuring consistent quality.
  • Lead and manage kitchen staff: training, scheduling, performance evaluations.
  • Implement strict inventory control, ordering, and stock rotation to minimize waste and ensure cost-effectiveness.
  • Ensure scrupulous compliance with all food safety, hygiene, and sanitation standards.
  • Collaborate effectively with Front-of-House and management to enhance guest experience.
  • Manage kitchen budgets, labor costs, and operational expenses efficiently.
  • Foster a positive, productive working environment, promoting teamwork and growth.
  • Contribute proactively to the estate's overall brand and reputation through exceptional culinary offerings.

Required Skills

  • Minimum 3 years of progressive experience as a Chef in a reputable restaurant, hotel, or guesthouse.
  • Formal culinary qualification from a recognized institution.
  • Proven ability to lead, mentor, and motivate a diverse kitchen team.
  • Exceptional creativity and a profound passion for developing unique and delicious dishes.
  • Strong knowledge of various cooking techniques and local Western Cape ingredients.
  • Excellent understanding of food safety and hygiene regulations.
  • Effective communication, organizational, and problem-solving skills.
  • Demonstrated ability to thrive under pressure in a fast-paced environment.

Preferred Qualifications

  • Prior experience in a wine estate, fine dining, or luxury guesthouse.
  • Specialization in specific cuisine types or pastry arts.
  • Knowledge of wine pairing principles.
  • Proficiency with menu costing and inventory management software.
